Blackened Chicken

Blackened Chicken features boneless, skinless chicken breasts coated in a blend of spices and herbs, then cooked first in butter and oil to achieve a distinctive dark crust, and finished in the oven for a juicy interior. The seasoning combines paprika, garlic, and various peppers, adding a layered flavor and smoky edge. The cooking process involves skillet-searing the coated chicken to develop color and flavor before oven-roasting to ensure thorough doneness. This method yields chicken with a crisp, spiced crust and tender texture, suitable for a main course served with sides like vegetables or grains.

Description

This Blackened Chicken recipe highlights skinless, boneless chicken breasts seasoned with a carefully balanced blend of spices including smoked paprika, cayenne pepper, garlic powder, and herbs such as thyme and oregano. The chicken is first coated in melted butter, then dredged thoroughly in the blackened seasoning to ensure full coverage. Cooking starts by searing the chicken breasts in a hot skillet with olive oil, promoting a golden-brown, flavorful crust. After searing both sides, the skillet is placed in a preheated oven to finish cooking the chicken through while maintaining juiciness.

The combination of butter and oil helps the spices adhere and develop a rich crust with a complex smoky and slightly spicy taste. The oven step at 400 degrees Fahrenheit ensures the chicken reaches a safe internal temperature of 165 degrees while keeping the meat moist inside. The result is a chicken with a tender interior and a textured, flavorful exterior.

This preparation pairs well with simple sides such as steamed vegetables, rice, or a fresh salad and serves as a versatile protein for lunches or dinners. The technique emphasizes creating a robust seasoning crust using common pantry spices and balancing moisture with oven finishing.

It is recommended to use an oven-safe skillet to avoid transferring the chicken after searing. If unavailable, carefully transfer the chicken to a baking dish before oven roasting to prevent loss of the flavorful crust.

Ingredients

Servings
  • 4 chicken breast boneless skinless
  • ½ cup butter melted, unsalted
  • 3 tablespoons olive oil

Blackened Seasoning

  • ¾ teaspoon sea salt coarse
  • 1 teaspoon oregano dried
  • 1 teaspoon thyme dried leaves
  • ¾ teaspoon black pepper ground
  • ½ teaspoon white pepper
  • ½ teaspoon onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon smoked paprika
  • ½ teaspoon garlic powder

Instructions

  1. Preheat your oven to 400 degrees F. While the oven is preheating, combine all of the blackened seasoning ingredients into a small prep bowl and stir to combine. Set aside.
  2. Next, add your butter to a microwavable safe bowl and warm for 30-60 seconds or until melted.
  3. Dredge each chicken breast into the melted butter, then coat all sides with the prepared blackened seasoning. Repeat until all the chicken is dredged and coated.
  4. Heat a large skillet (cast iron or stainless steel work best) over medium heat. Once the skillet is warm add in your oil. Once your oil is warm and shimming add in each chicken breast and cook for 3-5 minutes per side, or until the outside develops a golden-brown blackened color.
  5. Once both sides are blacked, place your skillet directly into the oven (only if it is oven safe, see notes) and cook the chicken for 15-20 minutes, or until the internal temperature reads 165 degrees F.
  6. Once the chicken is cooked through remove from the skillet and enjoy warm on its own with your favorite sauce, or added into your recipe of choice.

Notes

  • Use a cast iron or stainless steel skillet that can go from stovetop to oven to keep the blackened crust intact during cooking.
  • If your skillet is not oven safe, transfer the seared chicken to a baking pan before putting it in the oven.
