Blackened Mahi Mahi

Blackened Mahi Mahi features firm fish fillets generously coated with a blend of paprika, cayenne, dried herbs, and aromatic powders, cooked in a hot skillet to develop a dark, charred crust. The technique seals in moisture while imparting smoky, spicy notes, resulting in a well-seasoned, tender fish that benefits from optional buttery richness at the end of cooking.

Description

This recipe uses a mix of paprika, cayenne pepper, thyme, oregano, garlic powder, onion powder, and freshly ground black pepper to create a robust seasoning that envelops mahi mahi fillets. The fish cooks quickly in a very hot cast iron skillet, forming a distinctive blackened crust that contrasts with the moist interior. The char imparts smoky flavor and texture without overcooking the delicate flesh.

The option to add butter when flipping the fish adds a subtle richness that balances the spices, though the seasoning alone holds interest. The method requires high heat and attention for about three minutes per side for a properly cooked fish with a crisp exterior. This straightforward approach makes it suitable for a simple main course paired with light sides or salads.
