Blackened Mahi Mahi

This Blackened Mahi Mahi recipe features fresh fish coated with a homemade Cajun spice blend, seared in melted butter on high heat to develop a flavorful crust. The spices include paprika, cayenne, and other aromatics that provide a balanced heat and smoky depth. The quick cooking method ensures the fish remains moist with a tender texture, best served immediately with lemon and rice.

Description

The Blackened Mahi Mahi highlights a fresh fish fillet seasoned generously with a combination of paprika, cayenne pepper, salt, black pepper, ground ginger, oregano, fennel seeds, and clove. Rinsing and patting the fish dry ensures a good sear. Coating it with melted butter before applying the spice mix helps the seasoning to stick and adds richness.

Cooking in a hot cast iron or frying pan quickly sears the spices into a darkened crust while keeping the inside moist. About 2 to 3 minutes per side is sufficient to cook through without drying out. The heat and spice meld to create a complex flavor profile with a slightly spicy, smoky finish.

This dish pairs well with simple sides like steamed rice and a squeeze of lemon to brighten the flavors. The bold spice crust contrasts the mild mahi mahi, making it suitable for a flavorful main course. Alternative cooking methods include quick grilling or oven roasting, both preserving the fish’s moisture.
