Blue Cheese Pasta
Description
The preparation starts with cooking penne pasta according to package instructions. Shallots and crushed garlic are softened in butter until fragrant and tender, then single cream and chopped ham are added to the pan to simmer briefly, allowing flavors to meld. The drained pasta is combined in the pan with crumbled blue cheese and some reserved pasta water, which helps to loosen and emulsify the sauce, giving it a creamy texture.
The sea salt and black pepper season the dish, enhancing the sharpness of blue cheese and the savoriness of ham. Pine nuts sprinkled on top provide a textural contrast and mild nuttiness. Serving the pasta immediately ensures the sauce maintains its silky consistency.
Variations include serving the sauce over gnocchi or fresh tagliatelle for quicker cooking, adding red chili flakes to introduce heat, or garnishing with a splash of olive oil to enhance flavor complexity. Reserving pasta water is emphasized to maintain the right sauce texture.
