Description
This recipe uses canned, rinsed lentils along with fresh vegetables like eggplant, baby tomatoes, chopped yellow or orange pepper, and red onion, combined on a sheet pan with store-bought potato gnocchi and chopped garlic. The ingredients are tossed with a Greek-style dressing made from olive oil, oregano, lemon juice, red wine vinegar, garlic, salt, and black pepper, which imparts acidity and herbaceous notes.
Baking at 400°F for around 25 minutes softens the vegetables and gnocchi, while the crumble of goat cheese added near the end melts slightly for creamy, tangy contrast. Ingredients
For the sheet pan
- 19 oz lentil canned, drained and rinsed
- 1 pint Baby tomatoes halved
- 1 pepper yellow or orange, chopped in 1/2 inch pieces
- 1 eggplant small, chopped in 1/2 inch pieces
- 1 red onion chopped in 1/2 inch pieces
- 2 garlic cloves, chopped
- 500 g potato gnocchi store-bought
For the Greek dressing
- 1/2 cup olive oil
- 1/2 tbsp oregano dried
- 1/2 tsp salt
- 1/4 tsp black pepper
- juice lemon of one
- 1/2 tbsp red wine vinegar
- 2 garlic small cloves, pressed
Topping
- 100-125 g goat cheese plain
- 1/2 cup parsley chopped fresh herbs, mixed
- 1/2 cup dill
- 1/2 cup mint
- olive oil
- black olives optional, handful
Instructions
- Preheat the oven to 400F and line a large baking sheet with parchment paper.
- Mix the Greek dressing ingredients together and set aside.
- To the sheet pan add: rinsed lentils, chopped baby tomatoes, chopped pepper, chopped eggplant, chopped onion, gnocchi and chopped garlic cloves.Drizzle the Greek dressing over the ingredients on the pan and toss to ensure everything is very well coated.
- Bake for 25 minutes, tossing at the 15 minute mark. After 25 minutes crumble the goat cheese over top of all the ingredients on the pan and bake for 5 more minutes.
- Serve immediately topped with a mix of fresh chopped herbs, a drizzle of olive oil and handful of fresh black olives if desired.
Notes
- If lentils are not preferred, substitute with canned butter beans or chickpeas.
- Mix different canned beans like lentils with chickpeas or white beans for variety.
