Thick and delicious blueberry chia pudding with sugar free blueberry juice and a delicious healthy breakfast or enjoy as a dessert.

Ingredients
- 1 cup almond milk unsweetened
- 1/2 cup blueberry juice R.W. Knudsen Family Just Blueberry™
- 1/2 cup chia seeds whole
- 1 tablespoon vanilla extract
- erythritol optional, or Stevia to taste
- 1/4 cup blueberries optional, fresh
- Whipped Cream optional, fresh
Instructions
- In a medium bowl mix almond milk, blueberry juice, chia and vanilla extract until well blended. Cover and refrigerate for at least 30 minutes (overnight is better). Serve with whipped cream and fresh blueberries.
