Description
This compote starts by simmering half the blueberries alongside maple syrup, water, freshly squeezed lemon juice, and vanilla extract, allowing the mixture to cook down for about 10 minutes until the berries soften and release juice. Additional blueberries are then added and cooked for another 8 minutes, thickening the sauce as it cools. The lemon juice adds vibrancy while the vanilla imparts a subtle aroma, complementing the natural sweetness of the maple syrup and blueberries.
The resulting compote has a thick texture that clings well to pancakes, waffles, yogurt, or ice cream, adding fresh fruit flavor without excessive sweetness. It can be made fresh or prepared ahead and stored refrigerated.
Ingredients
- 2 cups blueberries fresh
- ¼ cup maple syrup
- 2 tablespoons water
- 1 tablespoon lemon juice fresh
- ½ teaspoon vanilla extract
Instructions
- Combine 1 cup of the blueberries, the maple syrup, water, lemon juice, and vanilla in a small saucepan. Simmer over medium heat for 10 minutes, stirring occasionally.
- Add the remaining 1 cup blueberries and cook for 8 minutes, stirring occasionally. Remove from the heat. The mixture will become thick and jammy as it cools.
