Blueberry Crepes

Blueberry Crepes feature thin, tender crepes filled with a thickened blueberry sauce made from fresh berries, sugar, and cornstarch. The delicate crepes are gently cooked in butter until just set and then layered with warm blueberry sauce and whipped cream, topped with fresh blueberries for added texture and flavor. This dish offers a balanced sweetness and a light texture ideal for breakfast, brunch, or dessert.

Description

This recipe creates light crepes by blending eggs, milk, flour, oil, sugar, and salt into a smooth batter, then cooking small amounts in a buttered pan until set but tender. The accompanying blueberry sauce combines fresh blueberries cooked with sugar, water, and cornstarch, thickening into a syrupy topping that complements the crepes' mild flavor. Once assembled, the crepes are covered with the blueberry sauce, whipped cream, and fresh blueberries to provide a contrast of warm fruit and cool creaminess. The filling's natural sweetness is balanced by the delicate pancake base.
