Description
This recipe creates light crepes by blending eggs, milk, flour, oil, sugar, and salt into a smooth batter, then cooking small amounts in a buttered pan until set but tender. The accompanying blueberry sauce combines fresh blueberries cooked with sugar, water, and cornstarch, thickening into a syrupy topping that complements the crepes' mild flavor. Once assembled, the crepes are covered with the blueberry sauce, whipped cream, and fresh blueberries to provide a contrast of warm fruit and cool creaminess. Ingredients
- 3 cups blueberries divided
- ¼ cup granulated sugar
- 3 tablespoons water
- 1 teaspoon cornstarch
- 1 cup Whipped Cream for serving
Crepes
- 2 egg
- 1 cup milk
- 1 cup all-purpose flour
- 2 tablespoons vegetable oil
- 1 teaspoon granulated sugar
- 1 pinch salt
- 1 tablespoon butter
Instructions
- Combine 2 cups blueberries, sugar, water, and cornstarch in a medium saucepan.
- Bring to a simmer while stirring and let cook 3-4 minutes or until thickened. Set aside.
- Combine eggs, milk, flour, oil sugar and salt in a blender.
- Pulse until smooth, about 5 times.
- Melt 1 teaspoon butter over medium heat in a 6-inch skillet.
- Add 2 tablespoons crepe batter and quicky pick up the skillet and swirl to move the batter to the edges of pan.
- Cook until tiny bubbles on the top pop and the crepe is set.
- Remove and place on a plate. Repeat with remaining crepes.
To Serve
- Place 3 crepes on a serving plate.
- Spoon blueberry sauce over crepes and top with whipped cream and remaining fresh blueberries. Fold or roll as desired.
