Blueberry Crisp

Blueberry Crisp features a juicy blueberry filling thickened with lemon juice, sugar, and cornstarch, covered by a golden topping made from rolled oats, almond flour, brown sugar, butter, and sliced almonds. Baking this dessert at 350°F until bubbly and crisp yields a warm, crunchy-textured topping complementing the soft, sweet berries underneath. This versatile crisp can be adapted with other fruits or spices to fit various palates.

Description

The Blueberry Crisp begins with a filling of fresh blueberries tossed with sugar, lemon juice, cornstarch, and a pinch of salt to balance the sweetness and help thicken the fruit juices during baking. The topping combines rolled oats and almond flour with brown sugar, salt, and cold butter, processed into coarse crumbs that bake into a crisp, nutty layer. Adding sliced almonds adds extra texture and flavor.

During baking at 350°F, the blueberry filling becomes bubbly while the topping turns golden and crunchy, creating a pleasing contrast in texture between the soft berries and crisp oat-nut crust. This dessert can easily be customized with other fruits such as peaches or apples and complemented with spices like cinnamon or ginger to suit the occasion.

Blueberry Crisp is typically served warm, either on its own or with ice cream or whipped cream. Its adaptability and straightforward preparation make it a dessert suitable for a wide range of seasonal fruits. The recipe’s notes suggest substituting different nuts and adding spices to balance and enrich the fruit flavors, allowing for personalized variations.

  • 2 Tablespoons cornstarch
  • pinch kosher salt

Blueberry Crisp Topping

  • 1 cup rolled oats regular, not steel-cut or quick cooking.
  • 1/4 cup almond flour
  • 1/2 cup light brown sugar
  • 1/2 teaspoon kosher salt
  • 6 Tablespoons butter cold, cut into small pieces, unsalted
  • 1/2 cup almonds sliced

Instructions

Blueberry Filling

  1. Toss blueberries with sugar, salt, cornstarch, and lemon juice. Coat well. Let the berries sit while preparing the crisp topping.

Blueberry Crisp Topping

  1. In the bowl of a food processor, pulse oats, almond flour, brown sugar, and pinch of salt.
  2. Add butter and pulse on and off until mixture resembles coarse crumbs.
  3. Briefly pulse sliced almonds, or mix in by hand.

Finishing Blueberry Crisp

  1. Pour blueberries into an 8" x 8" oven safe dish or similar size.
  2. Top berries with crisp mixture, patting it down over the fruit. Don't worry if it doesn't completely cover all the fruit.
  3. Bake at 350 degrees F. for 40-45 or until top is crisp and golden brown and filling is bubbly.

Notes

  • The crisp topping works well with various fruits like peaches, apples, pears, or mixed berries.

  • Replace sliced almonds with pecans or walnuts as preferred.
