Description
This layered dessert begins with a crust made from crushed shortbread cookies mixed with melted butter, baked briefly to set a firm base. Ingredients
- 10 ounces shortbread cookies
- ¼ cup butter melted
- 8 ounces cream cheese softened
- 1 cup powdered sugar
- 1 (8-ounce) tub Whipped Cream about 3 cups
- 12 ounces blueberry pie filling
- 1 cup pecans chopped
Instructions
- Preheat the oven to 350°F.
- Crush shortbread cookies in a bag. Take out about ½ cup of the mixture and set aside. Mix the remaining crushed cookie mix with the melted butter.
- Place buttered crumbs into the bottom of an 8.5 x 11.5-inch pan. Bake for 5 minutes and let cool.
- In a bowl, beat the cream cheese, powdered sugar, and container of Cool Whip until mixed well. Spread over the bottom crust later.
- Slowly pour blueberry pie filling over the cream cheese layer making sure it is spread all over.
- Sprinkle crushed pecans over the pie filling.
- Refrigerate for at least 1 hour until ready to serve.
- Right before serving add some Cool Whip and reserved cookie crumbs. ENJOY!
Notes
- Prepare the dessert in advance and cover it with plastic wrap before refrigerating for up to 24 hours to develop flavor and texture.
- For freezing, wrap the dish tightly with plastic wrap and foil, label it, and freeze for up to 1 month; thaw in the refrigerator before serving.
- Store leftovers covered in airtight containers in the refrigerator for 2-3 days or freeze for 3-4 weeks to maintain freshness.
