Blueberry Galette Recipe
Description
This blueberry galette combines fresh blueberries with sugar, flour, and lemon juice to balance sweetness and brightness. The filling is enclosed within a rolled pie crust with its edge folded to create a rustic tart. Baking at 425°F crisps the crust and gently softens the berries. Butter added on top adds moisture and richness as it melts.
The result is a tender crust encasing a bubbling, slightly thickened blueberry center with a hint of citrus. This galette can be served warm and complements vanilla ice cream or cream without overpowering the fresh fruit flavors.
It is best to let the galette cool for several minutes after baking to let the filling set before serving. Leftovers should be stored covered in the refrigerator and can be gently reheated if desired.
Ingredients
- 4 cups blueberries fresh
- ¼ cup sugar
- 1 tablespoon all-purpose flour
- lemon juice of ½ lemon
- 1 tablespoon butter
- 1 (9") pie crust refrigerated, store bought or homemade
Instructions
- Preheat oven to 425°F. Line a baking sheet with parchement paper or a silicone baking mat; set aside.
- In a large bowl combine the blueberries, sugar, flour, and lemon juice; set aside.
- Roll the pie dough to a 14" circle and transfer to prepared baking pan. Spoon blueberry mixture into the center of the dough leaving a 3 inch border. Fold this border over the fruit. Top the center with dots of butter.
- Bake for 25-30 minutes or until the crust is golden brown. Let stand for 5-10 minutes before serving.
Notes
- Store any leftover galette well covered in the refrigerator for up to 3 days.
- Reheat lightly in the microwave to enjoy warmth similar to fresh-baked.
- Allow the galette to rest for 5-10 minutes after baking to let the filling thicken and set before serving.
- Serving warm with vanilla ice cream enhances the fruit flavors.
