Blueberry Goat Cheese Pistachio Crostini

Balsamic blueberries, creamy goat cheese, crushed pistachios and fresh basil are combined in this delicious goat cheese crostini recipe!

Ingredients

  • 1 cup blueberries
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • ½ baguette sliced
  • 4 oz goat cheese
  • ¼ cup shelled pistachios chopped
  • 1 tbsp fresh basil chopped

Instructions

  1. Add the blueberries to a saucepan over medium heat.
  2. Pour the balsamic vinegar and olive oil over the berries.
  3. Simmer for 8-10 minutes.
  4. In the meantime preheat the oven to 400°F.
  5. Slice the baguette and place on a baking sheet.
  6. Place into the oven for 5 minutes.
  7. Spread the goat cheese on the baguette, then place back into the oven for 2-3 minutes.
  8. Remove from the oven and top with the balsamic blueberries.
  9. Add the chopped pistachios.
  10. Top with the fresh basil.
