Crostini with Roasted Tomatoes

Crostini with Roasted Tomatoes is the ultimate party food or appetizer to serve to guests. They look fancy, but are made with only three simple ingredients!

  • 4 roma tomatoes halved lengthwise
  • 1 tablespoon extra-virgin olive oil plus more for brushing
  • salt and pepper
  • 1 tablespoon fresh thyme plus more for garnishing
  • 8 slices baguette cut diagonally into 1/2 inch thickness
  • 1 garlic clove
  • 2 ounces honey Chèvre goat cheese

Instructions

  1. Preheat the oven to 375°F degrees. Place the tomatoes in a shallow baking dish, drizzle with olive oil and sprinkle with salt, pepper and thyme; toss to combine.
  2. Adjust the tomatoes so they are cut side up, and roast until the tomatoes soften and slightly shrink, about 40-45 minutes.
  3. Place the baguette slices on a wired baking sheet, brush with olive oil, sprinkle salt and pepper, and bake in the oven until golden brown, about 10 minutes.
  4. Rub the crostini with garlic and then divide the goat cheese between the crostini. Top with one slice of roasted tomato, drizzling any extra juice over the top. Garnish with fresh thyme and serve immediately.

Notes

  • Storage: Store any leftovers in an airtight container. They will last about 4-5 days in the fridge. It's best though to keep the three ingredients separated. Do not assemble until ready to serve/eat.
  • Freezing Instructions: For the crostini, prepare normally, but instead of placing in the oven, place in the freezer. When frozen, transfer them to a freezer safe bag. When ready to make them, remove from the freezer, follow the cooking instructions and add 5 additional minutes.
  • For the tomatoes, allow to cool, then transfer to a freezer safe container and freeze for up to 3 months. I would not recommend using them on top of crostini after frozen. But you can puree them to use in soups or sauces.
  • Substitutes: For best results, follow the recipe as is. However this is a very versatile recipe, so feel free to change type of tomatoes, bread and even the cheese spread you use.
