Ingredients

  • 13.5 oz light coconut milk
  • 1 cup blueberries
  • 1 coop Jay Robb Vanilla Whey Protein 
  • 5 tbsp chia seeds
  • 1/4 cup unsweetened coconut flakes
  • 1 vanilla bean pod seeds only (or 1 tsp vanilla extract)
  • 2 kiwi fruit peeled and sliced
  • 1 kiwi fruit peeled and chopped

Instructions

  1. Add blueberries to a microwave safe dish.  Microwave for 1-2 minutes or until berries have burst.  Place in a food processor and pulse until smooth.
  2. Whisk coconut milk with whey protein until smooth.  Add blueberries, chia seeds, coconut and vanilla and mix.
  3. Place chia pudding in resealable containers and refrigerate overnight.
  4. Arrange kiwi slices along the inside of a serving dish.  Add chia pudding and top with chopped kiwi and more blueberries if desired before serving.
