Blueberry Lemon Bread
Description
This quick bread recipe starts by creaming unsalted butter and sugar until fluffy, then blending in lemon juice, lemon zest, vanilla extract, and eggs. The dry ingredients—flour, baking powder, and salt—are sifted separately and alternated with whole milk before folding into the wet ingredients. Blueberries coated in cornstarch are gently stirred in to disperse evenly without settling.
Baked at 350°F in a buttered and floured 8x4 inch loaf pan for about an hour, the bread develops a lightly golden crust and a moist interior that is soft to the bite. The lemon provides a fresh brightness that complements the sweetness of the blueberries. This loaf is well suited for breakfast, snacks, or casual dessert.
