Blueberry Lemon Cookies with Lemon Cream Cheese Frosting

Soft, cake like cookies that are bursting with fresh blueberries and have a hint of lemon. These cookies melt in your mouth and are topped with the most amazing lemon cream cheese frosting!

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • lemon zest of 1
  • ½ cup unsalted butter 2 tablespoons softened
  • 1 ¼ cups granulated sugar
  • ¼ cup sour cream
  • 2 egg large
  • lemon juice of 1
  • 6 ounces blueberries about 1 cup

Lemon cream cheese frosting:

  • ½ cup unsalted butter softened
  • 1 (8-ounce) cream cheese block softened
  • lemon zest of one
  • lemon juice of one
  • 4 cups powdered sugar

Instructions

Blueberry Lemon Cookies:

  1. Preheat oven to 350 degrees Fahrenheit and line 2 baking sheets with parchment paper. In a medium-sized bowl combine 2 ½ cups all-purpose flour, 1 teaspoon baking powder, ¼ teaspoon salt, and zest of 1 lemon. Set aside.
  2. In a separate bowl or a stand mixer whisk together the ½ cup +2 tablespoons softened unsalted butter and 1 ¼ cups granulated sugar until light and fluffy. Add the ¼ cup sour cream, 2 large eggs, and juice of 1 lemon until incorporated. Slowly add in the flour mixture until combined. Gently fold in 6 ounces blueberries,
  3. Drop the batter by 2 tablespoons full onto the prepared baking sheet. Bake for 14-16 minutes or until lightly brown around the edges. Let cool on a wire rack.

Lemon Cream Cheese Frosting:

  1. Whisk together the ½ cup softened unsalted butter and 1 (8-ounce) block softened cream cheese until smooth and creamy. Add zest of one lemon and juice of one lemon and slowly whisk in the 4 cups powdered sugar until smooth and creamy.
  2. Frost the cooled cookies and enjoy!
