  • 1/4 cup butter melted and slightly cooled, unsalted
  • 1/4 cup vegetable oil
  • 3/4 cup granulated sugar
  • 2 large egg room temp
  • 2 tsp vanilla extract
  • 1 tbsp lemon juice
  • 2 tsp lemon zest, grated
  • 1 cup buttermilk
  • 2 1/2 all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup blueberries fresh

Glaze:

  • 2 cups powdered sugar icing sugar
  • 1-2 tsp lemon zest
  • 7-8 tbsp lemon juice fresh

Instructions

  1. Preheat oven to 350 degrees F
  2. Spray your donut pans with a non-stick spray.
  3. In a large mixing bowl, whisk together the flour, baking powder, and salt.
  4. Set to the side.
  5. In a separate mixing bowl, mix together the milk, sugar, egg, oil, butter, lemon juice, lemon zest, and vanilla until fully combined.
  6. Add your dry ingredients to the wet ingredients
  7. Mix until combined.
  8. Add your blueberries and lightly stir to combine.
  9. Spoon batter into donut pan
  10. Bake for 9-10 minutes until a toothpick inserted comes out clean.
  11. Let cool 10 minutes.

Glaze:

  1. In a medium sized mixing bowl, whisk together the powdered sugar and lemon juice until well combined.
  2. Place a piece of foil under the wire rack with the donuts to catch any glaze.
  3. Pour your glaze from the bowl onto the donuts.
