Description

Half the mixture is pressed firmly into the bottom of a baking pan to form the crust. A generous layer of blueberry pie filling or jam is spread over the crust, and the reserved crumb topping is sprinkled over, pressed lightly to cover. Baking at 350°F for about 30-35 minutes produces a golden brown crust and topping with a soft, fruity center. The bars need to cool completely before cutting to allow the filling to set.

Ingredients
- 1 cup all-purpose flour
- 1 cup rolled oats quick-cooking
- ⅔ cup brown sugar
- ¼ teaspoon baking soda
- ½ cup butter cut into cubes, cold
- 21 ounces blueberry pie filling or 10 ounces jam*
Instructions
- In mixing bowl, combine flour, oats, brown sugar, and baking soda.
- Using a pastry blender, cut in the cold butter cubes until the mixture resembles coarse crumbs.
- Reserve 1/2 cup of the flour mixture and set aside for the topping.
- Spray a 9x9 baking pan with cooking spray.
- Press remaining flour mixture into the bottom of the prepared pan.
- Spread the pie filling or jam on top of the flour.
- Sprinkle with reserved flour mixture.
- Press the topping gently into the jam with the palms of your hands.
- Bake at 350F for 30-35 minutes or until the top is golden brown.
- Allow the bars to cool completely, then cut and serve.
