These Blueberry Oatmeal Breakfast Bars are a delicious treat for breakfast or a snack. Simple to make and absolutely amazing, make a large batch of these bars and enjoy them for any time. Make a large batch and freeze some to have these bars on hand all the time.

Ingredients

Blueberry Layer Ingredients:

  • 2 1/2 cups fresh blueberries rinsed off
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons corn starch
  • 1/4 cup sugar

Crust Layer and Crumble Topping Ingredients:

  • 6 tablespoons unsalted butter melted
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1 1/2 cups old fashioned oats not instant
  • 1/2 cup honey
  • 1/4 cup brown sugar packed
  • 1/2 teaspoon ground cinnamon
  • pinch salt

Instructions

  1. Start by preheating the oven to 350 degrees
  2. Line the bottom of an 8×8 pan with parchment paper leaving some overhang, set aside
  3. Begin with making the crust, crumble topping:
  4. In a large bowl add the flour, oats, honey, brown sugar, ground cinnamon and salt
  5. Mix until combined
  6. Then, add the melted butter and vanilla stirring until mixture starts to combine
  7. Now, use your hands and kneed until combined
  8. Your mixture will be a little dry and crumbly which is good
  9. Set aside 1 cup of the mixture, this is the crumble topping
  10. Grab the rest of the oat mixture and add it to the baking pan lined with parchment paper
  11. Now using your hands, press the oat mixture into the bottom of the pan
  12. Make sure that the oats layer is even
  13. In a medium bowl, combine the blueberries, lemon, sugar, and corn starch
  14. Stir until the blueberries are coated well
  15. Next, add the blueberries over the crust in an even layer
  16. Grab the 1 cup of oat mixture you set aside
  17. Crumble the oat mixture over the top of the blueberry layer
  18. Bake at 350 degrees for 45 minutes, check randomly to make sure your bars aren't burning
  19. Remove the bars from the oven when time is up and set aside for 10 minutes to allow the bars to cool
  20. Lastly, cut and enjoy!
