Blueberry Pie Bars

Blueberry Pie Bars combine a buttery dough base with a sweet blueberry pie filling and a crumbly topping, finished with a vanilla glaze. The texture mixes a tender crust underneath with soft fruity layers above, making it a handheld treat. These bars are ideal when you want a convenient way to enjoy blueberry pie flavors without slicing a traditional pie.

Description

Blueberry Pie Bars start with a rich, buttery dough that is creamed with sugar and salt for lightness, then combined with eggs, vanilla, and flour. Part of the dough is pressed into a pan, topped with canned blueberry pie filling, and then dotted with the remaining dough before baking to create a golden, textured top layer. After baking and cooling, a vanilla sugar glaze is drizzled over the bars, adding a sweet finishing touch.

The bars offer a pleasing contrast between the crumbly crust and the juicy, slightly thickened blueberry filling. Baking in a single pan simplifies serving and storage compared to a traditional pie.

These bars can be cut into squares for easy portioning and transporting, making them suitable for casual gatherings or a quick dessert. The glaze enhances the sweetness and brings a hint of vanilla flavor that complements the filling.
