  • 3 cups blueberries fresh
  • cup granulated sugar
  • cup water
  • 2 tablespoons cornstarch dissolved into 2 tablespoons water to create a slurry
  • 1 teaspoon vanilla extract pure
  • 1 tablespoon lemon juice optional, freshly squeezed

Instructions

  1. In a medium saucepan over medium heat, combine blueberries, water, and sugar. Stirring regularly, bring mixture to a low boil.
  2. Stir cornstarch slurry into bubbling blueberry mixture. Reduce heat to low and let sauce simmer until thickened enough to coat the back of a spoon, about 5 minutes. For a thicker sauce, cook a bit longer. For a thinner sauce, stir in water, 1 tablespoon at a time, until desired consistency is reached.
  3. Remove saucepan from heat and stir in vanilla. For a touch of brightness, stir in 1 or more tablespoons of freshly squeezed lemon juice (optional). Serve warm or at room temperature, spooned over pancakes, waffles, cheesecake, and more!
