Blueberry White Chocolate Blondies

Blueberry White Chocolate Blondies are dense, sweet bars combining browned butter sugar mixture with flour, eggs, lemon zest, white chocolate chips, and blueberries. The texture is moist and chewy with bursts of juicy blueberries and creamy white chocolate. Baking until the edges golden and a clean toothpick emerges ensures a tender interior. These blondies offer a rich dessert with a subtle citrus note and fruity contrast.

Description

This recipe for Blueberry White Chocolate Blondies blends brown and granulated sugars melted with butter, which adds moisture and chewiness. The flour, baking powder, baking soda, salt, and lemon zest are mixed in, lending structure and a bright citrus note that balances sweetness. Eggs and vanilla bind the batter, creating a smooth texture.

White chocolate chips sprinkled on top and blueberries tossed in flour are layered over the pie, giving bursts of creamy sweetness and juicy fruit. Baking at 350°F for 45–55 minutes cooks the bars through, with foil tenting to prevent over-browning edges. Cooling to room temperature before cutting allows the blondies to set, ensuring clean slices.

These bars work well as a snack or dessert, offering a combination of creamy, fruity, and subtly tangy flavors in a portable form. The lemon zest lifts the flavor while blueberries add freshness against the buttery backdrop.

Ingredients

Servings
  • 2 cups brown sugar
  • 1 cup granulated sugar
  • 1 cup butter 2 sticks, unsalted
  • 3 egg large
  • 1 tablespoon vanilla extract
  • 3 cups all-purpose flour + 1 tablespoon for blueberries
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • lemon zest of 1
  • 1 cup white chocolate chips
  • 1 cups blueberries (can be frozen)

Instructions

  1. Preheat the oven to 350 degrees F. Melt both sugars and the butter together until the brown sugar is mostly melted. (You can do this in the microwave for 2-3 minutes or on stovetop.)
  2. Mix the flour, baking soda, baking powder, salt and lemon zest together. Add the melted sugar mixture and stir. Then add the eggs and vanilla. Stir well.
  3. Press the mixture into a greased 9 X 13 inch baking dish. Sprinkle the white chocolate chips over the top. Then toss the blueberries with 1 tablespoon of flour and sprinkle them over the top.
  4. Bake for 45-55 minutes, until a toothpick inserted into the middle comes out clean. If the edges of the blondies start to get dark, loosely tent a piece of foil over the top of the pan. Cool to room temperature before cutting.

Notes

  • Store blondies in an airtight container at room temperature to maintain freshness; they keep well for about a week.
