Bobotie

Bobotie is a South African baked dish combining ground venison with a blend of spices, bread soaked in milk, and a creamy egg and cream topping. The recipe layers aromatic curry flavors with a subtly sweet and tangy base, finished with a golden custard atop the casserole. This results in a comforting, savory dish with a moist texture and complex taste.

Description

Bobotie uses ground venison cooked with onions, garlic, curry powder, tamarind paste, and a mix of spices like garam masala and cayenne, along with cilantro or parsley and raisins for a gentle sweetness. Soaked bread is mashed into the meat mixture to bind and add richness. The mixture is then transferred to a casserole dish, topped with a mixture of beaten eggs and heavy cream, and baked at a moderate temperature until set and golden.

The finished bobotie offers a balanced combination of savory, sweet, and tangy notes, with a soft, custardy topping contrasting the hearty spiced meat below. It is typically served as a main dish and can be paired with rice or vegetables.

Ingredients

Servings
  • 3 lices white bread
  • 2 cups milk
  • 2 onion chopped (about 3 cups, large
  • 3 tablespoons butter
  • 2 garlic chopped, cloves
  • 2 pounds venison ground
  • salt
  • 2 tablespoons curry powder mild
  • 2 teaspoons garam masala or ½ teaspoon ground clove and 1 1/2 teaspoons ground allspice
  • 1/3 cup cilantro loosely packed, or parsley; chopped
  • cayenne pepper I use 1 teaspoon, to taste
  • 2 tablespoons tamarind paste mango chutney or peach jam
  • 3 tablespoons golden raisins (optional)
  • 3 citrus leaves or bay leaves
  • lemon juice or lime juice

TOPPING

  • 1 cup heavy cream
  • 2 egg large

Instructions

  1. Preheat the oven to 325°F. Soak the bread in 2 cups of milk.
  2. Cook the onions in the butter over medium heat until they’re soft, about 6 to 8 minutes. Sprinkle some salt over them as they cook. Add the garlic and the venison and brown well. Salt this as it cooks, too. Break apart the ground venison as it cooks so it looks like taco meat.
  3. When it’s pretty much browned, add the curry powder, tamarind and all the remaining spices and herbs, and the raisins if using. Cover the pan, add the lemon or lime juice, and let this cook for a few minutes.
  4. Squeeze out the milk from the bread and mash it into the mixture. Turn off the heat. Move the mix into a casserole dish and press it down well.
  5. Beat the eggs and cream together and pour over the casserole. Bake for 45 minutes to 1 hour, until the egg mixture is set and turning golden.
