  • 1 medium butternut squash about 2 pounds
  • ½ teaspoon sea salt
  • freshly ground black pepper to taste

Instructions

  1. Peel the butternut squash, remove the seeds, and cut it into ½-inch cubes.
  2. Bring a large pot of water to a rolling boil and add the sea salt.
  3. Carefully add the cubed squash to the boiling water and cook for 5-6 minutes, or until the squash is fork-tender.
  4. Drain the squash in a colander and season with freshly ground black pepper to taste. Serve warm as a side dish.
