Honey Roasted Butternut Squash

  • 1 lb (500g) butternut squash peeled and roughly cubed
  • 2 tablespoons butter melted
  • salt
  • freshly cracked black pepper
  • 2 teaspoons finely chopped parsley leaves
  • 2 tablespoons honey or maple syrup or to taste

Instructions

  1. Preheat the oven to 400°F (207°C).
  2. Toss the butternut squash cubes with melted butter, a large pinch of salt, black pepper, parsley, and honey in a large bowl. Transfer the mixture to a baking sheet lined with parchment paper.
  3. Spread the squash out in a single, even layer and roast for 30 to 45 minutes, or until the squash is fork-tender and lightly browned.

Notes

  • You can use olive oil instead of butter, if you like.
