Description

In this Bok Choy Stir Fry, fresh baby bok choy is trimmed and halved, then cooked in a hot skillet with vegetable oil and minced garlic. The bok choy is first seared cut-side down for texture, then flipped and coated with a sauce made from soy sauce, oyster sauce, sugar, and red pepper flakes. Covered and cooked briefly, the bok choy becomes fork-tender yet retains some bite.

  • 1 lb baby bok choy
  • 1 tbsp vegetable oil
  • 4 garlic minced, cloves
  • 2 tbsp soy sauce
  • 2 tsp oyster sauce
  • 1 tsp sugar
  • pinch red pepper flakes

Garnish

  • sesame seeds toasted optional

Instructions

  1. Rinse the baby bok choy. Trim and discard the damaged outer leaves and root end. Keep root intact. Slice each bok choy lengthwise down the middle.
  2. Heat oil in a large skillet or wok over medium high heat until hot. Add the garlic and saute for a 30 seconds. Add the bok choy, cut side down, and cook for 2 minutes.
  3. Flip bok choy, push to the outer sides of pan and in the middle add soy and oyster sauces, sugar, red pepper flakes, stirring to mix. Toss to coat bok choy. Cover and reduce heat to low heat. Cook for 1-2 minutes, until bok choy is fork tender.
  4. Uncover pan, transfer the bok choy to serving plate, pour pan drippings on top and sprinkle with (toasted) sesame seeds.

Notes

  • The video instruction mistakenly mentions salt instead of sugar; use sugar as indicated in the ingredients.
