The bolo de banana is a banana cake that is caramelized. It is a traditional cake that is very popular in Brazil.

Ingredients
For the dough
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 3 mashed bananas
- 4 eggs
- 1 cup whole milk
- ½ cup vegetable oil
- 1 cup caster sugar
- 1 tablespoon ground cinnamon
- butter , for the mold
- flour , for the mold
For the caramelized bananas
- 4 bananas
- 1 cup caster sugar
- ½ cup very hot water
Equipment
- springform pan , 10 inches / 25 cm
- Stand mixer
Instructions
Caramelized bananas
- Cut the bananas in half lengthwise, then cut each banana half into 3 or 4.
- In a saucepan, heat the sugar over low to medium heat until obtaining a gold caramel.
- Add very hot water and stir until the syrup thickens.
- Pour the syrup thus obtained into a springform pan previously buttered and floured (kick out the excess flour).
- Spread the banana pieces over the syrup and set aside.
Dough
- Preheat the oven to 350 F (180°C).
- Mix the flour and the baking powder and sift them. Set aside.
- In the bowl of a stand mixer, beat the eggs, milk, oil, and caster sugar until getting a frothy mixture.
- While continuing to beat, add the flour/baking powder mixture and the ground cinnamon.
- Continue beating until a homogeneous mass is formed.
- Add the mashed bananas and mix everything together with a spatula.
- Pour the batter into the mold, over the caramelized bananas.
- Place in the oven and bake at 350 F (180°C) for 50 minutes.
- Serve hot or lukewarm.
