Ingredients

For the dough

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3 mashed bananas
  • 4 eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 1 cup caster sugar
  • 1 tablespoon ground cinnamon
  • butter , for the mold
  • flour , for the mold

For the caramelized bananas

  • 4 bananas
  • 1 cup caster sugar
  • ½ cup very hot water

Instructions

Caramelized bananas

  1. Cut the bananas in half lengthwise, then cut each banana half into 3 or 4.
  2. In a saucepan, heat the sugar over low to medium heat until obtaining a gold caramel.
  3. Add very hot water and stir until the syrup thickens.
  4. Pour the syrup thus obtained into a springform pan previously buttered and floured (kick out the excess flour).
  5. Spread the banana pieces over the syrup and set aside.

Dough

  1. Preheat the oven to 350 F (180°C).
  2. Mix the flour and the baking powder and sift them. Set aside.
  3. In the bowl of a stand mixer, beat the eggs, milk, oil, and caster sugar until getting a frothy mixture.
  4. While continuing to beat, add the flour/baking powder mixture and the ground cinnamon.
  5. Continue beating until a homogeneous mass is formed.
  6. Add the mashed bananas and mix everything together with a spatula.
  7. Pour the batter into the mold, over the caramelized bananas.
  8. Place in the oven and bake at 350 F (180°C) for 50 minutes.
  9. Serve hot or lukewarm.
