BOO-Ringues

BOO-Ringues are delicate meringue cookies made primarily from whipped egg whites, sugar, and vanilla extract. The light, airy texture results from carefully beating the egg whites to stiff peaks and gently incorporating sugar to maintain their glossiness. Shaped into ghost-like figures and baked at a low temperature, these cookies develop a crisp exterior. The addition of black icing or frosting allows for creative decoration, turning them into spooky-themed treats ideal for festive occasions or a fun baking project.

Description

BOO-Ringues utilize egg whites whipped with sugar and vanilla to create a meringue batter with stiff, glossy peaks. The mixture is piped onto parchment-lined cookie sheets in ghost shapes before baking slowly at 250°F to develop a dry, crisp texture without browning. This slow baking ensures a delicate crunch while keeping the inside slightly moist. After cooling, black icing accents such as eyes and mouths bring the ghost shapes to life. These meringues are a sweet treat with a light, airy quality due to their whipped egg white base.

The subtle vanilla flavor complements the sweetness, and the cookies offer a crisp snap that contrasts with their creamy frosting details. They can be served as themed snacks or party desserts, especially suited for Halloween gatherings.

Ingredients

Servings
  • 4 egg white
  • 1 cup sugar
  • 1/2 teaspoon vanilla extract
  • black icing or frosting

Instructions

  1. Separate egg whites from yolks and add to a medium sized bowl. Let them sit out on counter to come up to room temperature for 30-60 minutes.
  2. Heat oven to 250° and cover un-greased cookie sheets with parchment paper.
  3. Beat egg whites with a hand mixerr on medium to high until stiff, moist peaks form. Slowly beat in sugar just a 1/4 cup at a time then fold in vanilla. Continue to beat mixture a few more minutes, ensure that it reamins glossy and does not become grainy.
  4. Fill a pasty bag with mixture and add a medium sized round tip (or just cut the edge off of the tip of a large freezer bag). Pipe medium to large circular, ghost shaped, mounds onto cookie sheets about 2 inches apart. Bake 30-35 minutes.
  5. Dip a toothpick into some black icing / frosting and add eyes, mouth, and any other 'scary' features to your ghosts!
