Description

This pie begins with a prepared pie crust lined in a 9-inch pan. At the base, dark chocolate chips and pecan halves create a textured, flavor-rich foundation. The filling consists of whisked eggs, granulated and brown sugar, dark corn syrup, melted butter, bourbon, vanilla extract, and salt, combined to form a smooth custard.

The filling is poured over the pecan and chocolate layer and baked at 350°F. Initially, the pie bakes uncovered for 30 minutes, then loosely tented with foil to prevent over-browning for an additional 20 to 30 minutes until the outer filling is set but the center remains slightly jiggly. Cooling the pie on a rack allows the custard to set further.

Optionally, melted dark chocolate can be drizzled on top after microwaving for a melting drizzle effect, enhancing the chocolate notes. Ingredients

  • 1 cups dark chocolate chips
  • 1 cup pecan halves
  • 3 large egg
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar packed
  • 1 cup dark corn syrup
  • 4 Tbsp butter melted and slightly cooled
  • 3 Tbsp bourbon
  • 1/2 tsp vanilla extract
  • 1/2 tsp kosher salt

Instructions

  1. Preheat oven to 350°F. Line a 9" pie pan with a pie crust and crimp edges as desired.

LINE CRUST

  1. To the bottom of the pie crust (in the pan pan), add 1 cup of the chocolate chips and the pecans. Refrigerate pie pan until ready to bake.

MAKE FILLING

  1. Add eggs to a mixing bowl and whisk until frothy.
  2. Add granulated sugar, brown sugar, corn syrup, melted butter, bourbon, vanilla and salt and whisk to combine well.

BAKE

  1. Remove pie pan from the refrigerator and pour filling over the top of the pecans/chocolate chips.
  2. Bake for 30 minutes. Cover loosely with foil, tenting it so the foil isn't laying on top of the pie filling.
  3. Bake an additional 20-30 minutes or until pie is just slightly jiggly in the center, but the outside is set.

COOL

  1. Cool completely on wire rack.

DRIZZLE (optional)

  1. Add 1/3 cup dark chocolate chips to a microwave-safe bowl and microwave on 50% power for 30 seconds. Stir, and continue microwaving in 15 second intervals, stirring after each interval, until chocolate is smooth and mostly melted.
  2. Stir until chocolate is completely melted, then drizzle over the top of cooled pie.
