Bourbon Pecan Pie Bars

Bourbon Pecan Pie Bars have a soft butter crust blended with oats, topped with a rich filling made from eggs, maple syrup, honey, bourbon, and pecan halves. These bars bake to a tender, moist consistency with a blend of sweet and nutty flavors balanced by a hint of bourbon. Designed as a dessert or snack, they can be sliced into large or smaller portions and keep well refrigerated for several days.

Description

This recipe for Bourbon Pecan Pie Bars begins with a moist crust made of butter, applesauce, brown sugar, flour, oats, and salt, carefully baked just until firm without browning. The filling blends eggs with granulated sugar, maple syrup, honey, bourbon, vanilla, melted butter, and plenty of pecan halves, creating a custard-like topping that bakes into the crust to form a cohesive bar with nutty texture and a touch of warmth from the bourbon.

Baked in a 9x9 inch pan, the bars firm up as they cool and are best served sliced into squares. They balance sweetness with the richness of pecans and a hint of bourbon, offering a complex dessert suitable for sharing at gatherings or after meals.

Bars can be stored in the refrigerator in an airtight container for up to five days, making them convenient for advance preparation. They can be sliced smaller for serving larger groups or kept larger for a decadent treat.

Ingredients

Servings

Butter Crust

  • ½ cup butter softened, unsalted
  • ¼ cup applesauce unsweetened
  • ½ cup brown sugar dark or light work
  • 1 cup all-purpose flour
  • 1 cup rolled oats not the instant kind
  • ½ teaspoon kosher salt

Bourbon Pecan Pie Filling

  • 3 egg
  • 1/3 cup granulated sugar
  • ¼ teaspoon kosher salt
  • ¾ cup pure maple syrup
  • 1/3 cup honey local
  • 2 oz. bourbon
  • 1 teaspoon vanilla extract pure
  • 3 tablespoons butter melted, unsalted
  • 1 1/3 cup pecan halves

Instructions

  1. Preheat the oven to 350°F. Spray a 9"x9" square cake pan with nonstick baking spray, then line with parchment paper. Set aside.

Make the Butter Crust

  1. Combine the softened butter, applesauce and brown sugar in a large bowl. Use a hand mixer or a rubber spatula to mix together until smooth.
  2. Measure in the flour, oats and salt. Stir until combined.
  3. Spread the crust mixture onto the bottom of the prepared baking dish using a rubber spatula or your hands. (If you use your hands, spray them with nonstick baking spray so that the mixture doesn't stick to you.)
  4. When the crust is evenly spread out across the bottom of the baking dish, pop it in the oven and bake for 15-20 minutes. You don't want the crust to brown, but you do want it to firm up.
  5. When the crust has pre-baked, remove from the oven and set aside.

Make the Bourbon Pecan Pie Filling

  1. Break the eggs and measure in the sugar into a large bowl. Use a hand mixer or a metal whisk to mix until the ingredients are light yellow and creamy.
  2. Measure in the salt, maple syrup, honey, bourbon, vanilla extract and melted butter. Stir the ingredients until incorporated.
  3. Add the pecan halves to the mixture, and use a rubber spatula to stir them into the batter.
  4. Pour the filling on top of the baked crust, and transfer to the oven.
  5. Bake the bars for 45-60 minutes, or until the bars are set. (They'll have browned on top, and when you move the cake pan, they will not appear to be liquidy anymore.)
  6. When they are baked through, remove the bars from the oven.
  7. Let the bars cool for 30-45 minutes, then slice into even bars and serve.

Notes

  • This recipe yields 9 large bars, but you can slice them smaller for more servings.
  • Store bars in an airtight container in the fridge for up to 5 days to maintain freshness.
