Ingredients

  • 2 (5-ounce) Boursin cheese garlic and herbs, quantity as per package
  • 2 (10-ounce) cherry tomato quantity as per package
  • 1 (8-ounce) sundried tomato oil drained, jarred
  • 2 cloves garlic about 2 teaspoons, minced
  • 2 teaspoons basil about 5 leaves, fresh; minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 12 ounces pasta I used cavatapi
  • 1 cup water reserved pasta water
  • Parmesan Cheese freshly grated, for garnish
  • basil for garnish

Instructions

  1. Spray a 9x13x2 inch baking dish with cooking spray. Preheat oven to 400 degrees Fahrenheit.
  2. Place 2 (5-ounce) packages of Boursin cheese, in the center of the baking sheet. Arrange 2 (10-ounce) packages of cherry tomatoes, 1 (8-ounce) jar of sundried tomatoes, and 2 cloves garlic minced, around the cheese. Sprinkle the 2 teaspoons fresh basil minced, ½ teaspoon salt, and ½ teaspoon pepper over everything.
  3. Bake the cheese and tomatoes for 20-25 minutes, the cheese should be melted and the tomatoes tender and juicy.
  4. While the cheese and tomatoes bake cook 12 ounces pasta, according to the package directions, until it’s al dente. Keep 1 cup reserved pasta water.
  5. Pull the pan of cheese and tomatoes out of the oven and whisk everything together into a sauce. Add pasta water to the sauce as needed to reach the desired consistency.
  6. Add the cooked pasta to the sauce and mix to coat. Garnish with Freshly grated parmesan for garnish and Additional basil for garnish and serve.

Notes

  • You may not need to use any reserved pasta water, this is all up to what consistency you want for your sauce.
  • If you want a smooth sauce, use an immersion blender, or blend the sauce in a blender to get a smooth consistency.
