Description
This Boursin Pasta begins by cooking farfalle pasta until just al dente, reserving some pasta water to adjust sauce consistency later. Meanwhile, chicken tenderloins are seasoned and pan-seared in olive oil until browned and cooked through, then rested and chopped for even distribution. The sauce starts with sautéing diced shallots in butter, softening them and adding sweetness.
Once the shallots are translucent, reserved pasta water is added to the pan to deglaze and capture any browned bits. Boursin cheese is whisked in, melting into a garlic-herb creamy sauce that coats the pasta and chicken well. Tossing the cooked pasta and chicken in this sauce allows flavors to meld, while additional pasta water can thin the sauce if needed.
Finishing touches of freshly grated parmesan and chopped parsley add sharpness and a fresh herbal note to the dish. This pasta serves as a simple yet flavorful meal with rich creaminess balanced by herbaceous accents.
Ingredients
- 1 lb farfalle pasta dry
- 2 Tablespoon olive oil
- 1.5 lbs chicken tenderloin boneless, skinless
- 2 Tablespoons butter
- 1 shallot , diced
- 2 oz Boursin cheese cut into pieces, garlic herb flavor, packaged
- salt to taste, freshly ground
- black pepper to taste, freshly ground
- 1/2 cup Parmesan Cheese freshly grated
- ¼ cup parsley fresh chopped
Instructions
- Cook pasta in salted boiling water, according to package instructions, until al dente. Drain, but reserve pasta water.
- Cook Chicken: Season chicken with salt and pepper. Heat a skillet over medium heat. Once hot, add olive oil. Once olive oil is hot, add chicken and cook until browned, turning once, until cooked through (165 degrees). Remove to a plate to rest for a few minutes, before chopping into pieces.
- Sauce: Add butter to pan and fry shallots for 1 to 2 minutes, stirring constantly. Reduce heat to low. Add 1 cup reserved pasta water to the pan and scrape up any browned bits. Whisk in Boursin cheese until melted and smooth.
- Serve: Add cooked pasta and chicken to the pan and toss to evenly coat in sauce. Add a splash of pasta water, if needed, to thin the sauce. Season with salt and pepper, if needed. Garnish with fresh parmesan and parsley.
