Description
This Braised Red Cabbage recipe starts by melting butter in a heavy pot before coating thin, trimmed slices of red cabbage in the butter. White vinegar, water, sugar, and kosher salt are added to build a balance of tartness and sweetness. The covered pot finishes cooking the cabbage in the oven at a low temperature for two hours, resulting in tender, silky cabbage that has absorbed the cooking liquids.
Shortly before the end of cooking, red currant or lingonberry jelly and freshly grated apple are stirred in, adding fruity sweetness and subtle texture. The dish is seasoned as needed with additional salt and black pepper. This combination creates a complex flavor profile that complements rich meats and traditional festive meals.
The braised cabbage can be prepared up to two days in advance, allowing flavors to mellow further. If desired, jelly varieties can be swapped with raspberry or black currant, and a few tablespoons of chunky applesauce can replace the grated apple if unavailable.

- 1 head red cabbage sliced very thin (about 3 pounds, trimmed

- 1/3 cup white vinegar
- 1/3 cup water
- 1 Tablespoon sugar
- 1 teaspoon kosher salt
- 1/4 cup Red currant jelly (or lingonberry)
- 2 Tablespoons apple grated
Instructions
- Preheat oven to 325 degrees F.
- Melt butter in a Dutch oven over a medium heat.
- Sauté cabbage for a few minutes, coating all the cabbage with the butter.
- Add vinegar, water, sugar and salt and sauté another couple of minutes.
- Cover Dutch oven and place in center of oven for 2 hours.
- 10 minutes before cabbage is done, remove from oven and stir in red currant or lingonberry jelly and grated apples. Return to oven for an additional 10 minutes. Season to taste with additional salt and black pepper if necessary.
- Can be made up to 2 days in advance.
Notes
- Prepare this dish up to two days ahead to allow flavors to develop.
- Substitute red currant jelly with raspberry or black currant jam or jelly if preferred.
- If grated apple is unavailable, use chunky applesauce for similar sweetness and texture.
