Braised Red Cabbage
Description
The Braised Red Cabbage recipe starts by slicing cabbage, apples, and red onion, which are simmered together with liquids including water, red wine, and red wine vinegar to meld their flavors. Brown sugar and a blend of warm spices including cinnamon, nutmeg, cloves, and optional star anise add subtle sweetness and aromatic depth. As the mixture gently cooks for over an hour, the cabbage softens and absorbs the sweet-tart seasoning, resulting in a tender and richly flavored dish. It offers a balance between savory and sweet notes that make it a traditional complement to roasted or braised meats.
The slow simmering method softens the cabbage and allows the flavors of the fruit and spices to develop fully. The use of red wine and vinegar provides a mild acidity that brightens the dish and cuts through richer mains. The texture is soft but not mushy, maintaining some body from the cabbage and apples.
This braised cabbage is typically served warm and pairs well with pork, beef, or poultry dishes, offering a comforting vegetable side with a hint of fruitiness and spice. Its moderate sweetness and vinegar tang can balance fatty or savory mains effectively, making it suitable for autumn and winter meals.
Ingredients
- 1 red cabbage
- 2 apple
- 1 red onion
- ⅔ cup water 150 ml
- ⅓ cup red wine or additional water, 75ml
- ¼ cup red wine vinegar 50ml
- 2 tablespoon brown sugar
- 1 star anise optional
- ¼ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ⅛ teaspoon cloves ground
- salt
- black pepper
Instructions
- Wash the cabbage, remove any old outer leaves and cut out the core. Slice the cabbage into quarters, then slice each quarter thinly.
- Peel, core and thinly slice the apples. Peel, halve and finely slice the onion.
- Add the cabbage, apples and onion to a pot, along with the water, wine and vinegar. Bring to the boil, then reduce the heat to low, give it a stir, cover with a lid and simmer for 45 minutes. Stir occasionally so it doesn’t scorch on the bottom of the pot. If necessary, add a little extra water.
- Stir in the sugar, star anise (if using) and spices, season with salt and pepper, cover with the lid and simmer for a further 20 minutes or until the cabbage and apples are soft.
- Serve warm.
