Bratwurst In Beer With Onions

This recipe simmers bratwurst sausages gently in butter, onions, caraway seeds, and amber ale until tender and infused with flavor. The sausages are then browned either on the stove or grill for a crisp exterior. Served in buns with the cooked onions, this preparation produces bratwursts that are juicy and aromatic with a slightly sweet and spiced onion-beer broth complement.

Description

Bratwurst In Beer With Onions starts by cooking sliced yellow onions and caraway seeds in butter until softened, which imparts a sweet and aromatic base. The bratwurst sausages are nestled into this mixture, and amber ale is poured in to simmer gently for 30-40 minutes, allowing the sausages to cook through while absorbing the beer and onion flavors.

After simmering, the bratwursts are removed and browned to develop a flavorful crust, either on the stove or over a grill. The onions and beer broth are returned to the pan to keep warm. The combination of butter, caraway, and beer gently flavors the sausages, enhancing their natural taste with subtle aromatic and malty notes. The finishing crisp browning adds textural contrast.

Served in warm buns along with the onions and a coarse mustard, this recipe makes a satisfying and traditional-tasting bratwurst sandwich. The beer and onions add depth without overwhelming the sausage.

Ingredients

Servings
  • 2 tablespoons butter
  • 1 ½ onion sliced, yellow
  • 1 tablespoon caraway seeds
  • ½ teaspoon kosher salt
  • 6 bratwurst sausage
  • 1 ounce amber ale or nut brown ale
  • 6 Buns

Instructions

  1. In a cast iron or heavy-bottomed skillet, melt the butter over medium-high heat. Add the onion and caraway seeds and cook for 5 minutes or until the onions begin to soften. Season with kosher salt. Nestle the bratwursts in the onions, add the bottle of ale and bring to a low boil. Reduce the heat to a simmer and cook for 30-40 minutes, turning the brats occasionally.
  2. To finish the bratwursts on the stove, transfer the onions and beer broth to a bowl and set aside. Add the brats back to the skillet and increase the heat to medium-high. Brown the sausages evenly on all sides, adding a little more butter or oil if needed. Add the onions and beer broth back to the skillet and keep warm.
  3. To finish the bratwursts on the grill, preheat the grill to medium-high heat. Cook the bratwurst sausages on the grill for 2-4 minutes per side or until browned on all sides. Add back to the skillet with the onions and beer and keep warm.
  4. Serve on warm buns with onions and coarse, grainy mustard. Add sauerkraut if desired.
