Brazilian Black Bean Puree (Tutu a Mineira)

This Brazilian Black Bean Puree, Tutu a Mineira, is Brazilian comfort food that is rich, hearty, and full of smoky, garlicky flavor. Made with blended black beans, crispy bacon, and farinha de mandioca (Brazilian cassava flour), this recipe is thick, creamy, and irresistibly satisfying. It’s the perfect way to turn leftover beans into something even more delicious, whether as a side dish or a meal on its own.

Ingredients

Servings
  • 1 cup bean make sure there is at least ½ cup of liquid, leftover, cooked and seasoned, about heaping cup
  • ¼ cup onion diced
  • 3 cloves garlic minced
  • 1 thick Bacon approximately ¼ cup, slice, diced
  • 2 tablespoons olive oil plus more for serving, extra virgin
  • 2 tablespoons cassava flour Brazilian, aka farinha de mandioca
  • salt to taste
  • black pepper to taste

Instructions

  1. Add your leftover beans to a food processor and pulse until smooth, and set aside.
  2. In a medium pan over medium heat, drizzle about a tablespoon of olive oil.
  3. Add in the diced bacon and fry until crispy.
  4. When the bacon is crispy, scoop it out of the pan using a slotted spoon and place it into a plate lined with paper towels and set it aside.
  5. Add the diced onions to the pan with the bacon fat and sauté until translucent.
  6. Next add the minced garlic and sauté until fragrant and lightly golden.
  7. Add the beans to the pan and stir to combine.
  8. When the beans start to simmer, slowly sprinkle the Brazilian cassava flour and stir over low heat until it thickens into a soft puree consistency.
  9. Serve drizzled with olive oil and the crispy bacon. You can also add a splash of your favorite vinegary hot sauce!

  • Canned beans are not recommended - Your Tutu de Feijão will only be as good as the beans recipe you are starting with to ensure the beans and the liquid are already flavorful. You can use any seasoned leftover beans you have. The leftover recipe I used for these photos was the Vegan Black Beans, but my Brazilian Black Beans recipe on the site also works wonderfully!
  • Farinha de mandioca/Brazilian Cassava Flour (not to be confused with tapioca flour) is easy to find on Brazilian markets all over the world, online, and even on Amazon.
