Ingredients
- 2 tablespoons butter unsalted
- 2 pounds chicken breast skinless, boneless, cut into cubes
- 1 onion about a heaping cup, medium-large, diced
- 1 tablespoon sofrito or 3 garlic cloves, minced, Brazilian style
- 1 oz can tomato sauce
- 1 tablespoon ketchup
- 1.5 cups heavy cream
- salt to taste
- black pepper to taste
Instructions
- Add the cubed chicken pieces to a large dish, season with salt and pepper, and set aside.
- Place a large heavy bottomed pan or dutch oven over medium to high heat. Add the butter, and let it melt.
- Add the chicken pieces and cook them until they start to brown.
- Add the onion, and cook until transparent, then add the garlic and cook until fragrant.
- Add in the tomato sauce and the ketchup, let it come to a simmer and let it simmer for 2-3 minutes.
- Add the cream and simmer uncovered for 5 minutes, and serve!
