Ingredients

  • 1 cup tomato about 3 tomatoes, cored and diced
  • 1 cup green bell pepper about 1 small bell pepper (cored, seeded and diced, diced
  • 1 cup onion about 1/2 an onion, diced
  • ½ cup olive oil good quality
  • ¼ white wine vinegar or more if you like it more vinegary
  • salt to taste
  • black pepper to taste
  • 2 Tbsp cilantro finely chopped

Instructions

  1. Add the vegetables to a large bowl
  2. Add the oil and vinegar
  3. Season with salt and pepper
  4. Add the cilantro and give it a stir to combine everything
  5. Cover and let it sit in the fridge for at least a half hour
