After combining, the salsa rests covered in the refrigerator for at least thirty minutes to allow the flavors to blend and mellow.

Ingredients
- 1 cup tomato about 3 tomatoes, cored and diced
- 1 cup green bell pepper about 1 small bell pepper (cored, seeded and diced, diced
- 1 cup onion about 1/2 an onion, diced
- ½ cup olive oil good quality
- ¼ white wine vinegar or more if you like it more vinegary
- salt to taste
- black pepper to taste
- 2 Tbsp cilantro finely chopped
Instructions
- Add the vegetables to a large bowl
- Add the oil and vinegar
- Season with salt and pepper
- Add the cilantro and give it a stir to combine everything
- Cover and let it sit in the fridge for at least a half hour
