Breakfast Cookies
Description
The dough is formed by mixing mashed bananas with honey, peanut butter, and salt, followed by folding in quick oats and dried fruit. The batter is portioned into balls, pressed slightly, and baked until set. The combination of wet banana and peanut butter with oats produces a soft, chewy cookie that provides energy without added refined sugars beyond honey. Dried cranberries add tartness and texture.
These cookies can be served immediately after baking for optimal freshness. Their combination of fruit, oats, and peanut butter makes them suitable for quick breakfasts or portable snacks to fuel the day.
