British Mashed Potatoes (British Mash Recipe)
Description
The recipe starts by peeling and quartering Yukon Gold potatoes, which are boiled in salted water until fork-tender. Any foam during boiling is skimmed off, and the potatoes are thoroughly drained, then left to steam dry briefly for a fluffier texture. Mashing is done with a hand masher or potato ricer to achieve smoothness.
Butter is stirred in along with heated milk, which helps create a creamy consistency. The mash is seasoned with additional salt and freshly ground black pepper to taste. Yukon Gold potatoes provide a buttery flavor and medium starch suitable for this style of mash.
This mash works well as a standard side for roasts, stews, or sausages. It can be adjusted by using other medium-starch potatoes like Dutch Cream or Maris Piper. Salted butter is preferred but unsalted can be used if seasoning is increased accordingly.
Ingredients
- 1 ½ lbs potato see note 1, Yukon gold variety
- 1 tablespoon salt
- 4 tablespoon butter - see note 2
- ¼ cup milk
- salt to taste
- black pepper to taste
Instructions
- Peel the potatoes and cut them into quarters.1½ potatoes
- Place the potatoes in a pan and add cold water until they are covered by at least an inch of water.
- Add the salt and bring to a boil.1 tablespoon salt
- Skim off any scum that appears on the surface, then reduce the heat to medium and cook for 20-25 minutes until tender to a fork.
- While the potatoes are cooking, heat the milk in the microwave (or in a small pan) until it is just below boiling.¼ cup milk
- Drain the potatoes very well and leave them in the sieve or colander for several minutes to really steam dry.
- Use a hand masher or potato ricer to mash until smooth.

Notes
- If Yukon Gold potatoes are unavailable, substitute with other medium-starch potatoes such as Dutch Cream, Desiree, or Maris Piper for similar texture and flavor.
