Simple Chicken breast stuffed with a cheesy broccoli mixture, seared, then baked to perfection. Quick and easy weeknight chicken dinner recipe.

  • 1.5 pounds boneless skinless chicken breasts or 4 large breasts
  • salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder divided
  • ½ teaspoon paprika
  • 1 tablespoon Italian seasoning
  • 1 Cup small chopped broccoli florets
  • 1 Cup shredded cheddar cheese
  • ¼ Cup cream cheese

Instructions

  1. Preheat your oven to 375 F. 
  2. Place the 1.5 pounds Boneless skinless chicken breasts on a chopping board and, using a sharp knife, slice through the middle to create a pocket for the stuffing.
  3. Repeat with all the chicken breasts, then season with Salt and pepper, to taste, ½ teaspoon Paprika, and 1 tablespoon Italian Seasoning on all sides.
  4. In a mixing bowl, combine 1 Cup Small chopped broccoli florets with 1 Cup Shredded Cheddar Cheese, 1 teaspoon Garlic Powder, and ¼ Cup Cream Cheese. season with a pinch of salt and pepper. Spoon the mixture into the chicken breasts, and secure the pocket using toothpicks.
  5. Heat 1 tablespoon Olive Oil in a large, ovenproof skillet over medium-high heat. Add the chicken and sear for 2-3 minutes on each side, then transfer to the oven and bake for an additional 15-17 minutes.
  6. A meat thermometer inserted in the middle of the chicken should read 165F. Enjoy!

Notes

  • Substitutes:
  • Storage: Place leftovers in a container and store them in the fridge for up to 5 days. Reheat in the microwave when ready to eat. You can freeze for up to 3 months.
  • Cream cheese can be light or fat-free
  • Cheddar cheese can also be light 
  • Frozen broccoli can be used instead of fresh
  • Avocado oil in place of olive oil
