Broccoli Cheddar Soup
Description
This recipe begins by gently sautéing diced onions, shredded carrot, and minced garlic in butter, developing a flavorful base. The remaining butter is added with flour to create a roux, which thickens the soup after adding chicken broth. A mix of mustard powder, cayenne, salt, and black pepper seasons the broth. Chopped broccoli and half-and-half are incorporated, allowing the soup to simmer until the broccoli softens. Sharp cheddar cheese is stirred in gradually to melt smoothly without graininess, creating a creamy consistency.
The flavor profile combines the mild sweetness of cooked carrots and onions with the cheesy richness and a slight heat from spices, balanced by the mild bitterness of fresh broccoli. The method ensures a smooth, velvety texture, while optional red pepper flakes offer an additional spicy kick. Serving with homemade garlic butter croutons or crusty bread adds textural contrast and enhances the eating experience.
This soup works well as a warm starter or a light main dish. It can be enjoyed year-round and pairs well with simple side salads or sandwiches. The cheese and cream make it filling and flavorful.
Ingredients
- 8 Tablespoons butter (divided)
- 1 large onion (finely diced)
- 1 large carrot (shredded or finely diced)
- 3 garlic minced, cloves
- 1/2 cup flour (or cornstarch)
- 3 cups chicken broth (if you want a thicker soup, use 2 1/2 cups)
- 1 teaspoon mustard powder dried
- 1/4 teaspoon cayenne pepper
- 2 teaspoons salt
- 1 teaspoon black pepper
- 3 cups broccoli (chopped)
- 2 1/2 cups half-and-half
- 3 cups cheddar cheese grated, sharp
- 1/4 teaspoon red pepper flakes (optional)
- garlic butter croutons optional, homemade
Instructions
- Heat a large pot over medium heat. Add 4 Tablespoons of butter and let it melt. Add onions and carrots and cook for about 7-8 minutes, stirring often. Add garlic and saute for 1 minute.
- Add remaining 4 Tablespoons of butter. Stir in flour. Add chicken broth and use a whisk to mix together. Add dried mustard powder, cayenne, salt, and pepper.
- Add broccoli and half-n-half. Let simmer for about 20 minutes or until broccoli is softened. Add cheese 1/2 cup at a time, stirring well after each addition. This helps to keep the creamy consistency and not end up with a grainy consistency.
- Taste for seasonings. Add more salt and pepper, if needed. Serve with homemade garlic butter croutons or buttery crusty bread for dipping.
