Broccoli Goat Cheese Stuffed Chicken
Description
The recipe prepares the filling by blending softened goat cheese with steamed and finely chopped broccoli florets, lemon zest, Italian seasoning, granulated garlic, onion powder, red pepper flakes (optional), salt, and pepper. A slit pocket is cut into each chicken breast, which is then stuffed with this flavorful mixture.
Chicken breasts seasoned on both sides with Italian herbs, garlic powder, onion powder, salt, and pepper are seared in olive oil until golden, then transferred to the oven to finish cooking. This two-step method ensures a crisp, lightly browned exterior and tender interior. The goat cheese filling melts slightly, adding creamy texture and mild tanginess that balances the herbaceous, savory chicken.
Steamed broccoli provides a mild vegetable note and moisture to the filling. The lemon zest brightens the overall flavor. This dish can be served on its own or paired with light sides like salads or roasted vegetables.
To steam broccoli quickly, place florets in a microwave-safe bowl with water, cover with plastic wrap cut with a slit, and microwave for 2–3 minutes until tender.

- 1 tablespoon olive oil
- 4 chicken breast boneless skinless
- 1 1/2 teaspoons Italian seasoning

- 1/4 teaspoon onion powder
- kosher salt fresh ground, to taste
- black pepper fresh ground, to taste
Instructions
- Preheat oven to 400° F.

Roast the chicken for another 8-12 minutes or until the chicken's internal temperature is 165° F. Let the chicken rest for 5 minutes before serving.
Notes
- Steaming broccoli florets in the microwave with a bit of water and plastic wrap is a quick way to soften them before mixing into the filling.
- Ensure the chicken reaches an internal temperature of 165°F before serving to guarantee it is cooked through.
- Let the stuffed chicken rest 5 minutes after roasting to redistribute juices and maintain tenderness.
