Chicken

  • 1 tablespoon olive oil
  • 4 chicken breast boneless skinless
  • 1 1/2 teaspoons Italian seasoning
  • 1/4 teaspoon granulated garlic
  • 1/4 teaspoon onion powder
  • kosher salt fresh ground, to taste
  • black pepper fresh ground, to taste

Instructions

  1. Preheat oven to 400° F.
  2. In a small bowl stir together the ingredients for the filling and set aside.
  3. Cut a slit in each chicken breast to form a pocket then them stuff with the broccoli goat cheese mixture. In a small bowl combine the spices to season the chicken. Sprinkle evenly over both sides of the chicken breasts.
  4. Heat the olive oil in an oven safe skillet over medium-high swirling to coat the bottom of the pan. Cook the chicken 2-3 minutes per side then place the skillet in the oven. Roast the chicken for another 8-12 minutes or until the chicken's internal temperature is 165° F. Let the chicken rest for 5 minutes before serving.
