Broccoli Mac and Cheese
Description
This Broccoli Mac and Cheese recipe starts by sautéing minced garlic and chopped broccoli florets in olive oil and butter in a skillet. Meanwhile, macaroni is cooked and drained separately. Once the pasta is ready, it’s added to the skillet along with frozen peas to heat through. Parmesan cheese is grated into the mixture alongside salt and black pepper to taste.
The final dish features tender macaroni enveloped in the natural creaminess of melted Parmesan and buttery oil, with fresh broccoli and peas adding texture and color. The garlic imparts aromatic depth, while the cheese adds a sharp, savory note. The broccoli florets can be large or smaller depending on preference, and the cheese amount is adjustable based on desired richness.
This dish serves well as a side with protein dishes or as a light vegetarian dinner. Its simple ingredient list and one skillet preparation make it practical for quick weeknight cooking.
Ingredients
- 1 tablespoons olive oil
- 1 tablespoon butter
- 1 large garlic minced, clove
- 1 1/2 cups broccoli florets
- 2/3 cup peas frozen
- 1/4 pound macaroni cooked and drained
- 1/2 cup Parmesan Cheese more or less, according to taste
- salt to taste
- black pepper to taste
Instructions
- Start by mincing some garlic and chopping up some broccoli.Your florets can be big or small. Mine was on the bigger side because I felt like not taking the time to chop them smaller. Get the garlic and broccoli into a big skillet and saute in a little olive oil and butter.
- In the meantime, cook a little pasta. I had this in the fridge from the other night when I made this, but if you don't have pre-cooked macaroni on hand, start boiling some water.
- Once you have your pasta is all done, toss it into that pan with some frozen peas. I love these little guys!Once the peas get heated through, add in the broccoli and grate in some real Parmigiano Reggiano, salt, and pepper. Use as much cheese as you like! As you can see, I used a truckload. Stir this all up and voila!Serve it up and that's it! Makes for a great side dish or light vegetarian dinner.
