Ingredients

  • 1 tablespoon tomato paste
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly cracked black pepper
  • 6 tablespoons olive oil
  • 1/2 pound rotini pasta
  • 1 pound broccoli
  • 1/2 cup diced red onion
  • 1/4 cup unsalted sunflower seeds
  • 4 ounces feta cheese

Instructions

  1. In a bowl, whisk together tomato paste, red wine vinegar, dried basil, garlic powder, sugar, salt, and black pepper until smooth. Gradually whisk in olive oil until the vinaigrette is emulsified. Set aside.
  2. Boil rotini pasta as per package instructions until tender, then rinse under cool water and drain well.
  3. Chop the broccoli into bite-sized pieces and finely dice the red onion.
  4. In a large bowl, combine drained pasta, broccoli, red onion, and sunflower seeds. Crumble the feta cheese over the mixture, pour the vinaigrette, and toss to coat evenly. Serve immediately or chill.
