Broccoli Steaks Recipe

Broccoli Steaks are thick sliced broccoli heads seasoned and roasted for a crispy-tender texture with golden edges. The roasted florets are dressed with butter-toasted pine nuts, minced garlic, parmesan cheese, and a pinch of chili flakes, adding richness, nuttiness, and a subtle heat to the earthy broccoli flavor, making it a satisfying vegetable side dish.

Description

This recipe cuts medium broccoli heads into three thick 'steaks' that hold their shape while roasting. Drizzled with olive oil and sprinkled with sea salt, the broccoli is roasted at 425°F until golden and slightly crisp on the edges. Meanwhile, pine nuts are gently toasted in butter with minced garlic to bring out their aroma and flavor.

Once roasted, the broccoli steaks are topped with the warm pine nut and garlic mixture, parmesan cheese, and chili flakes, combining creamy, nutty, and spicy elements with the tender vegetable. The roasting brings out a natural sweetness and a meatier texture from the broccoli, creating a hearty yet simple side.

The dish is served hot immediately after assembling to enjoy the contrast of temperatures and textures between the roasted broccoli and nutty toppings, which enhance its flavor complexity.

Ingredients

Servings
  • 2 medium broccoli heads
  • 1 tablespoon olive oil
  • ¼ teaspoon salt sea salt
  • ¼ cup Parmesan Cheese
  • 1 pinch chili flakes
  • 2 tablespoons butter
  • ¼ cup pine nuts
  • 1 small garlic minced, clove

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper. Cut each head of broccoli into three pieces and place them on the baking sheet. Drizzle the olive oil over the broccoli and use your fingers to work it into the broccoli florets. Sprinkle the sea salt over the top.
  2. Roast the broccoli steaks for 25-30 minutes, until it turns golden at the edges. When the broccoli steaks come out of the oven, sprinkle them with the butter-toasted pine nuts (see instruction 3), parmesan cheese, and chili flakes and serve immediately.
  3. While the broccoli steaks are roasting, prepare the pine nuts. Melt the butter in a small frying pan over medium heat. Add the pine nuts and garlic and cook, stirring often, until they are light brown, 2-3 minutes.
