Broiled or Grilled Pollo Sabroso
Description
This recipe begins by seasoning chicken thighs with vinegar and soy sauce, then coating them with a combination of Sazon seasoning, adobo spice, garlic powder, and dried oregano. The use of Sazon gives the chicken a characteristic seasoning often including achiote, which imparts color and earthiness. The ingredients are mixed carefully to prevent staining.
The chicken is allowed to marinate before grilling or broiling on low heat, turning occasionally to ensure even cooking without burning. This slow cooking method results in juicy, flavorful chicken with a lightly crisped skin.
The dish serves well as a protein alongside rice and a fresh salad, highlighting the seasoned but straightforward preparation.
