Broiled Salmon with Broccolini
Description
This recipe prepares salmon fillets marinated in a mixture of garlic, shallot, fresh lime juice, soy sauce, honey, and olive oil. The marinade emphasizes contrasting flavors of tanginess from lime, umami from soy, and slight sweetness from honey. After marinating for 30-60 minutes, the salmon is broiled on top of broccolini that has been sliced lengthwise for a thinner, quicker-cooking texture. Broccolini is tossed with olive oil and broiled until lightly charred before placing the salmon on top. Additional marinade is spooned over the fish before returning to the broiler to develop a slightly charred edge, while the center remains medium. Garnishes of sliced scallions and optional Fresno chile add freshness and a gentle heat.
The combination results in tender, flavorful salmon with crispy edges and broccolini that maintains some bite and a pleasant char. Broiling both together makes for efficient cooking and easy cleanup. The recipe suggests using foil-lined baking sheets to simplify post-cooking clean up. This dish can be served alone or as part of a larger meal, offering a balance of protein and vegetable with Asian-inspired seasoning.

Remove salmon from marinade and nestle on top of the broccolini. Spoon ½ of the remaining marinade over and place back under the broiler until the salmon is charred around edges, about 6 minutes.
- Spoon the rest of the marinade over the top and add the sliced scallions and sliced Fresno chile. Broil, about 2 minutes more until the salmon is charred and medium at thickest part. Let rest for a few minutes for any residual cooking and serve.
Notes
