Brown Butter Krispie Treats

Classic rice krispies treats are always popular, but adding this rich, nutty browned butter glaze over the top makes the irresistible. This is one of my most requested recipes to bring to family functions!

Ingredients

  • 3/4 cups butter divided
  • 7 cups Rice Krispies cereal
  • 9 cups mini marshmallows
  • 1 cup powdered sugar

Instructions

  1. In a large stock pot, melt 1/4 cup of the butter over medium. Whisk constantly until the butter turns a golden brown. As it melts and begins to brown it will foam quite a bit. Keep whisking until the foam dies down and you can see the browned bits in the butter. Do not let get overly browned/burnt.
  2. Immediately add the marshmallows to the pan and continue stirring until the marshmallows have melted. Remove from the heat and pour in the cereal. Stir to coat.
  3. Line a 9x13 pan with parchment or wax paper and press the cereal mixture into the pan. Use another sheet of parchment or wax paper to press the treats into place in the pan.
  4. In a small sauce pan, melt the remaining 1/2 cup of butter over medium heat. Whisk constantly until the butter turns a golden brown. As it melts and begins to brown it will foam quite a bit. Keep whisking until the foam dies down and you can see the browned bits in the butter. Do not let get overly browned/burnt.
  5. Remove the butter from the heat and whisk in the powdered sugar until the mixture is smooth. It will be clumpy at first, but will turn smooth as the sugar melts.
  6. Pour the hot glaze over the krispies treats and smooth it over the top. Let sit until hardened, about 1 hour.
  7. Cut into small squares and serve.

Notes

  • Want an even gooier rice krispie treat? After stirring the cereal into the marshmallow mixture, add an additional cup or two of mini marshmallows and stir again. They'll soften up but won't melt, leaving little gooey marshmallow bits throughout. 
  • Be careful not to burn the butter. It will go from golden brown to burnt quickly, so whisk constantly and keep a close eye on it.
