Brown Butter Rice Krispies Treats

Brown butter Rice Krispies treats are soft and gooey cereal treats bursting with the rich flavor of brown butter.

Ingredients

  • 1/2 cup butter unsalted
  • 8 cups mini marshmallows divided
  • 2 teaspoons vanilla extract
  • 7 cups Rice Krispies cereal
  • 1/2 teaspoon salt sea salt

Instructions

  1. Line a 9x9 baking pan with parchment paper or grease the pan with nonstick spray. Set aside.
  2. Add your butter to a large pot over medium-low heat.
  3. Cook, stirring occasionally, until the milk solids in the butter start to turn golden brown.
  4. Turn the heat to low.
  5. Mix in 6 cups of the marshmallows and keep stirring until all the marshmallows have melted.
  6. Remove from heat.
  7. Stir in the vanilla extract.
  8. Add in the Rice Krispies and the remaining marshmallows, and stir just until the cereal is well coated.
  9. Transfer the cereal mixture to the prepared pan.
  10. Spray a rubber spatula with nonstick spray and gently press the cereal mixture into an even layer.
  11. Sprinkle the salt on top.
  12. Let the Krispie treats cool to room temperature to set up.
  13. Remove the treats from the pan and cut into squares.

Notes

  • Butter: If you like more salty/sweet brown butter flavor, use salted butter in place of the unsalted butter.
  • Marshmallows: You could use large marshmallows to melt, but I recommend using mini marshmallows to stir in.
  • Vanilla extract: Feel free to adjust the vanilla extract to your tastes. You could also use vanilla bean paste.
  • Cereal: You could use a different flavor of Rice Krispies, like Cocoa Krispies, to change up the flavor.
  • Sea salt: It's important to use sea salt or finishing salt. Table salt is saltier and may make your treats too salty.
